You do recall the aphorism, an apple a day keeps the doctor away?
Well, I always eat an apple. (I mean EAT the apple- I throw away nothing). And, at least two carrots. A stalk of celery. Every single day.
And, now the results (published in the British Medical Journal) from an international study of 23,416 patient study means y’all should be doing this too. The study spanned about 10 years of life. The correlation was between Vitamin C and carotenoid (found in tomatoes and carrots) levels in the blood and diabetes Type 2. (The researchers chose those two components because they are reliable indicators of fruit and vegetable consumption.)
When we choose a diet that is high in fruits and vegetables, we are reducing the chance we’ll develop type 2 diabetes by about 50%. Actually, for ever 66 g (about 2 ½ ounces) of added fruits and veggies in our diet, we reduce our chances of manifesting Diabetes Type 2 by 25%.
(I am not going to report on the 24 y long study of about 195K subjects from Harvard/Brigham and Women’s Hospital, also reported in the BMJ, that found consumption of whole-grain foods [oatmeal, brown rice, dark bread, bran, wheat germ] cut the risk by 29%.)
That’s pretty good news- since about 10% of our population suffers from Type 2 Diabetes.
Oh, yeah. Don’t even consider trying to find some snake-oil concoction that contains Vitamin C or carotenoids. Because those pills (even if they come from a “reputable” source) won’t replace the real thing. EVER!
Have an apple! Even if you buy it pre-scliced!
And, not their juice, either. The entire veggie or fruit.

Buying a presliced apple might not be the best idea in the world as they must dip it in something to keep it from turning brown. At home or in one of my kitchens that would be lemon juice but when they are mass producing sliced apples I would consider taking the two seconds to slice my own, after washing the outside completely. I preach eating whole foods on my website and suggest that the Blue Zone diet or the Mediterranean diet are the two best choices because fruits and vegetables should be our main source of food. Nice article, thanks for sharing, now I think I will make apple pancakes or perhaps a nice low sugar carrot cake this afternoon. I make my carrot cake without the cream cheese frosting that the commercial ones are covered with. It is more like a carrot bread made with almond flour and farm fresh eggs.

And, yes, if we cut our apples, we need to coat them with PINEAPPLE juice, that enhances the flavor (more than lemon juice). But, the commercial ones (I have only bought such wares from WaWa) manage to last for the 25 minutes it take for me to finish them, once opened, on my drives to and from the Phillies baseball game.
Hmm. That is a good point. Maybe the organic ones? I have chronic fatigue syndrome so I need EASY, no-fuss healthy recipes, you know? Just realized William probably won’t know I am talking to him.

I could probably buy it pre-sliced! I am trying to eat healthier and to lose weight, and have been thinking up ways to add back fruits and veggies. So far, it has mostly been salads and fruit yogurt. But maybe I could add apple slices to my salads. Or grapes. Carrots, though, and celery? I just am not so fond of them – unless they come with dip. 😉
I love celery and carrots. And, celery is mostly water and fiber- with some vitamins and minerals added for good measure. (I seem to remember it takes about as much energy to chew celery as it provides us!)
